彭吉星，男，1987年7月生人，于2015年6月獲中國海洋大學藥物化學專業博士學位，現任中國水產科學研究院黃海水產研究所助理研究員。主要從事水產品營養品質評價與功能產物等方面的研究，主持或參與課題10余項，包括國家重點研發計劃子課題，國家自然科學青年基金，山東省自然科學青年基金，農業行業標準項目等。發表SCI論文20余篇，其中第一或共一作者8篇。獲發明專利5項，軟件著作權2項，參與制修訂國家及農業行業標準5項，1篇信息建議獲全國政協每日社情采用。

主要研究內容、研究方向
主要圍繞水產品營養品質評價與功能產物開展以下研究：① 水產品營養組分檢測與評價標準；②水產品特征功能成分挖掘與構效關系；③水產品品質形成（保持）機理與調控技術。研究團隊已構建了氨基酸、維生素、核苷酸及有機酸等水溶性營養物質的高通量精準液質分析方法，系統開展牡蠣、扇貝和鮑等重點養殖貝類的營養品質評價；建立基于高分辨質譜的非靶向/靶向代謝組學技術平臺，開展了不同產地、品種以及環境脅迫對水產品的營養品質影響機制研究。
